Sicilian Sfingi Donuts

INGREDIENTS:

  • 1/2 lb whipped Ricotta Cheese
  • 1/4 cup Sugar
  • 1/2 tsp Vanilla
  • 3 Large Eggs
  • 1 cup self-rising Flour
  • Confectioner's Sugar
  • Cinnamon
  • Vegetable oil for deep frying 

INSTRUCTIONS:

Heat vegetable oil to 350 degrees.
Beat the eggs until fluffy. Mix with the ricotta, sugar, vanilla until smooth
Mix in self-rising flour, beat until smooth.

Drop tablespoons of batter into the oil a few at a time, and remove the Sfingi from the oil when they reach a golden brown. Drain them on absorbent paper.

Sprinkle with confectioner's sugar and a touch of cinnamon.
Or, drizzle with honey and roll in chopped almonds.
