Tiramisu Cake

INGREDIENTS:
6 Egg yolks
1 cup Espresso coffee, cooled
1 ¼ cup Granulated Sugar
60 Savioardi (Lady Fingers) Cookies
1 ¼ cup Mascarpone Cheese
⅛ cup cocoa powder
1 ¾ cup Heavy Whipping Cream
1 Tbsp Granulated Sugar
¾ cup Frangelico Liqueur
INSTRUCTIONS:
In a double boiler over simmering water, whisk together egg yolks and sugar until smooth and lemon yellow in color. Bring water to a boil and reduce heat to low. Cook egg mixture for 10 minutes, stirring constantly.
Remove mixture from the heat. Stir in mascarpone, mixing well. Let cool to room temperature. In a separate bowl, whip heavy cream until soft peaks form. Fold in cheese and egg mixture. Combine liqueur with espresso.
In a 13x9 pan, line the sides and bottom of the pan with half of the Savioardi cookies. Lightly brush all of the cookies with the espresso mixture. Pour half of the cheese mixture over the cookies. Arrange a second layer of the remaining cookies. Pour remaining cheese mixture over the top of the chocolate cookies. Smooth top with a spatula. In a small bowl, mix cocoa and remaining sugar together. Sprinkle evenly over the filling.
Cover and chill overnight.
